dal ka dulha is a tasty dish from Uttar Pradesh.dal ka dulha is a tasty, nutritious dish and a variation to the regular dal roti which we normally prepare at home. I don’t know how this dish got the name, but when I saw this in Northern Flavors by Chef vijay kumar I found it very interesting and tried it immediately.
I have used toor dal as was shown in the recipe, but you can also make use of moong dal for making dal ka dulha.

ingredients
for dough dumplings
whole wheat flour – 1 and 1/2 cups
carom seeds or ajwain – 1/2 teaspoon
for dal
arhar dal or toor dal – 1 cup
tomato – 1/2, chopped
garlic – 3
turmeric powder – 1/2 teaspoon
red chili powder – 1/2 teaspoon
amchur powder – 1/2 teaspoon
asafoetida powder – a pinch
salt – to taste
for tempering
oil or ghee – 1 tablespoon
garlic – 2- 3 cloves
cumin seeds – 1 teaspoon
whole red chili – 2
tomato – 1/2, chopped
coriander leaves – 2 tablespoons, finely chopped
to make dal
1. Wash and soak toor dal for 10 – 15 minutes.
2. Add the dal to a pressure cooker along with garlic, red chili powder, amchur powder, asafoetida powder, turmeric powder, tomato, garlic, and salt. Add enough water and pressure cook for 3 – 4 whistles or until the dal gets cooked well.
3. Wait till the pressure subsides and then open the pressure cooker.

4.Take whole wheat flour, carom seeds in a bowl. Mix well. Add water little by little and knead it to a soft firm dough. Just as we make chapati.
5. Divide the dough into equal sized balls. Take each ball, dust it with wheat flour, place them on a rolling board and roll it into a circle using a rolling pin.
6. Using a cookie cutter or using a lid, cut circles. Repeat the same steps with the rest of the dough.
7. Take each circle, using both hands bring the edges of puris up from four sides, press well and make a dulha shape as shown in the picture or you can make any desired shape. Keep them on a plate.
8. Boil enough water in a bowl. Add the prepared dumplings or the dulha into the boiling water. Boil them for 4 – 5 minutes or until the dumpling start floating on the water.

9. Bring dal to a boil.
10. Remove the dumplings from water and add it to the dal. Boil it for another 3 – 4 minutes.
11. Meanwhile, heat oil or ghee in a pan. When the oil becomes hot enough, add cumin seeds, chopped garlic, and dry red chili. Saute till the raw smell of garlic goes off completely.
12. Add finely chopped onion and saute till onion turns transparent.
13. Add finely chopped tomatoes, saute well till tomatoes get cooked well and become mushy. Add the tempered ingredients to the dal. Turn off the flame. Finally, add chopped coriander leaves, mix well.
14. dal ka dulha is ready to serve. Add 1 teaspoon of ghee on top.
